I LOVE to bake! Especially with Pinterest and all of the mouth watering recipes I like to pin, I have been a baking NUT! With that said, one thing I try to control is the amount of sugar I consume. A lot of “healthy” recipes call for sugar alternatives like splenda or stevia (which I am ok with) but I LOVE when you can completely eliminate the need for any processed sweetener. This banana bread recipe is just TO-DIE-FOR and contains NO added sugar…I did choose to add dark chocolate chips for a little extra somethin’ somethin’ but you do not need to (I promise it will be just as good!).
Here it is!
2 large or 3 small overly ripe bananas (keep some in a brown lunch bag to start ripening at a faster rate if you didn’t quite plan ahead)
1/2 Cup Apple Sauce
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp vanilla extract
1/2 cup whole wheat flour (Choose a quinoa, brown rice, almond, amaranth, or a variety of other options for a gluten free and higher protein form of flour) *To make your own whole grain flour mix check out this post by “Gluten-Free Girl and the Chef”! You’ll get a great muffin recipe as well!
1/4 cup melted butter or clarified butter
I eat these as my “treat” so I added about 1/4 cup of dark chocolate chips! Indulge a little, you deserve it!!
Mix it all up in a bowl. Do not OVER stir, it will come out mushy.
Pre Heat your oven to 375 Degrees
Bake for 20-25 minutes make sure to check bread at 20 minutes.
I used a small rectangle baking pan for this recipe and it came out perfectly.
